BBQ Pulled Chicken Sandwich

 
Do you still crave things that you once gave up?  Almost sixteen years ago I gave up pork.  But that doesn't mean that every once in a while when I see a pulled pork sandwich my mouth doesn't water. Instead of giving into the craving I have found an alternative.
I could, one, ask the hubby to bust out the grill, which would only mean that I am asking for him to give me the ‘are you crazy’ look.  Or two, I could pull all the smoky flavors I have together in my house to try and copycat the grilled, smoky flavor.  Given its December I am going with number two. This BBQ pulled chicken sandwich has nice smoky flavor.  Once you add barbecue sauce on a toasted bun I forget all about missing a ‘real’ pulled pork sandwich.  And I crave no more.

Ingredients:

3 large chicken breasts
Tony Chachere’s Famous Creole Seasoning
Garlic powder
Lemon pepper
Cumin
Chili powder
Olive oil
Andouille sausage
Brown sugar
Six pieces of turkey bacon
Butter
1 small onion
1 chopped garlic clove
 
 

Directions:

Preheat oven to 250 degrees.
Line baking pan with foil (that is if you want easier clean up).
Season chicken breasts.

Drizzle 2-3 tablespoons of olive oil in pan.
In a baking dish or slow cooker place chicken Andouille in pan and sprinkle with brown sugar.

Warp turkey bacon around seasoned chicken – 2 per chicken breast.

Slather breasts with butter and sprinkle chicken with more brown sugar.  Then cover chicken breasts with onions and garlic.

Place foil over tightly.
Cook slow and low.  250 degrees 1 and a half to 2 hours.

Let chicken cool and pull apart – chicken should shred easily.

Serve on a toasted bun and enjoy!
