Cheesy Broccoli Soup
In a marriage there are compromises, right? I just knew that once I stopped eating meat I'd marry someone who was also a non-meat eater. And… I didn't. When I met the hubby the hardest meat product I was on was eggs. Eight years later the hubby still enjoys a nice pork chop and steak and I now enjoy chicken. But, on the other hand I don't cook beef or pork in my pots. If the hubby wants pig or cow he's gotta find it at either his mama or my mama’s house...or a restaurant. The compromise over the years has been that the kiddos take on my diet while the hubby eats whatever. However, every once in a while I try to get him to eat a vegetarian meal. This time I am hoping to satisfy his meat loving palate with this cheesy broccoli soup. There’s a 99.9% chance he will still want a meat on the side. I can deal with that – after all it is all about compromise.

Servings: 2 grown people, 1 teen girl and 1 growing eight year old boy and 1 6 year old girl (Enough for dinner and leftovers to send with the kiddos for lunch) Prep Time: 10 mins Cook Time: 40 mins Total Time: 50 mins
5-6 Cups fresh broccoli florets 6 tbsp. butter 1/2 onion chopped 1 cup chicken broth Salt Black pepper 1/4 cup of plain flour 2 cups heavy whipping cream 1 1/2 cup extra sharp cheese 1 cup sharp cheese 1 cup Asia go cheese
Melt butter. Add chopped onions and broccoli. Add chicken broth. Simmer on low to medium until begin to soften about 20-25 minutes. Add sprinkle of salt and pepper. Remove pan from heat. Remove cooked broccoli and whisk in flour completely. Add heavy cream and cheese and return to heat on low for about 10 minutes. Purée half of broccoli in blender and cut down in remaining big pieces left in the other half of the broccoli. Add puréed broccoli and whole broccoli to creamy cheese mixture and pass around to the family! (If too thick add more heavy whipping cream and any salt and pepper to taste.)
