Chicken Salad Sandwich
Do you like leftovers? Years ago I wasn’t a fan of leftovers. But then again years ago I wasn’t cooking for five people on a daily basis. Now when I look at leftovers I try my hardest to put on my thinking cap and come up with a ‘what in the world am I gonna do with this?’ plan before I chuck it into the trash. The other day I baked a chicken for dinner. After dinner I am usually left with not enough chicken to put together with an entire meal, but way too much to put in the trash. If it was cold I would probably make soup. But instead I am turning these leftover pieces into chicken salad! This way I am not wasting food and in the blink of an eye I just turned an old dinner into a new lunch! Winning!
Servings: 2 grown people, 1 teen girl and 1 growing eight year old boy and 1 6 year old girl Prep Time: 5-7 mins Cook Time: 0 mins Total Time: 5-7 mins
2 cups of leftover baked chicken 1 finely chopped celery stalk 1 cup mayo 1/4 sour cream 1/2 tsp dill weed 1 tsp dried chives 1/2 tsp onion powder 1/8 tsp salt (optional) 1/8 tsp black pepper Squeeze of half a lemon
Directions:Chop up your chicken (you can cut into cubes but I shredded my chicken and then roughly chopped it up).
Add mayo, sour cream and lemon juice.
Mix well and enjoy!
