Christmas Sugar Cookies
Have you finished up your Christmas shopping? Ummmm….not I. But, within the next few days I intend to make some major headway. It is always like this for me this time of year. I am running, from one store to another – with my aching feet and body surviving off of snacks (i.e. French fries and Auntie Anne Pretzels) and cups of overpriced coffee. After all the shopping is done, my next step is to ready myself for Christmas Eve. Forget Christmas day, Christmas Eve has got to be the busiest day of the Holiday season for me. There’s cooking and baking to do, presents to wrap and traditions to fulfill. We gotta watch A Christmas Story, It’s a Wonderful Life and some kinda version of A Christmas Carol. And of course we have to make sugar cookies. Oh yes, even though we don’t give into the whole Santa Claus deal, I still feel compelled to have the taste of butter and sugar crystals on my tongue on Christmas Eve. A urge I more than satisfy after the kiddos finally go to bed.
Ingredients:1 3/4 cup white sugar 1/4 cup light brown sugar 1 cup softened butter 1 egg 2 1/2 cups flour 1 tsp baking soda 1/4 tsp salt 1 tsp cornstarch 1 tsp vanilla
Preheat oven to 350 degrees. Cream together butter and sugars. Then add egg. Sift together dry ingredients. Add to creamed mixture. Then add vanilla extract. Wrap cookie dough in parchment paper and refrigerate for at least 15 minutes. Remove dough from refrigerator. For smaller cookies cut dough in half and roll out 1/2 of dough on floured surface. (You can refrigerate the rest for later or make bigger cookies 🙂 ) Sprinkle with red sprinkles generously. Start folding over dough on one side, using parchment as aid, then roll up dough into log. Then cut log into 1 inch size slices. Place cookie dough slices on baking sheet – leave enough space in between each cookie. Bake at 350 for 8-10 minutes.
