Crab Stuffed Mushrooms

 
When your family goes out to eat what type of appetizers do you order?  For us it’s usually something really cheesy or saucy.  But, when it’s just me and the hubby there is one appetizer that we will fight over who will have the last one -   stuffed mushrooms. 
When I was pregnant with my youngest I would beg the hubby to grab some from the restaurant.  After so many trips I decided I could learn to make them myself….and I did.  Now we can enjoy stuffed mushrooms more often and just fight over the last one at home.

Ingredients:

 

1 stick of butter
2 cartons of mushrooms
½ red bell pepper chopped
1 can of lump crab meat
1 garlic clove chopped or 1 tsp garlic powder
2 chopped green onions
1 chopped celery stalk
Salt
Pepper
1/3 cup Italian bread crumbs
¼ cup grated parmesan cheese
Shredded Mozzarella
Shredded Asiago cheese

 

 

 

 

 

Directions:

 

Preheat oven to 350 degrees.
 
Melt 3 tbsp. butter in baking pan.

Chop stems from mushrooms.

Melt 3 tbsp. butter in pan or griddle.

Sauté bell pepper, green onions, celery and chopped mushrooms stems.

Transfer to a bowl and fold in crab meat and bread crumbs. Then fold in cheese. Stir until combined.

Scoop into each mushroom cap.

Bake for 20 minutes.

Remove from oven add shredded cheese over mushrooms and bake for 5-7 minutes more.
