Creamy Chicken Asiago & Mushrooms
Planning on a dinner night out for Valentine’s Day? After eight years of marriage we have gotten to the point of why bother. No love lost for each other, but rather for the mad pace, expensive Valentine’s Day night out. For me and the hubby to go out alone means hiring a babysitter, which will no doubt run us a good $40 dollars. Then once we get to a restaurant we get to spend another $100 to fight with the millions of other couples who are trying to make the most of their allotted few hours away from the kids. No fun really, if you ask me/us. So, we’ve come to love a kid filled Valentine Day dinner at home. This is one of the times in the year when I try to make a special dinner for the entire family. This way we spend more time than money. And hopefully everyone in the family knows they are all my Valentine!
Ingredients:1 lb. boneless skinless chicken breast Garlic salt Black pepper 6 tbsp. butter 2 cloves garlic minced 1 cup sliced mushrooms 1 cup chicken broth 1/2 cup heavy whipping cream 1/2 tsp dries thyme 1 cup shredded Asiago cheese
Directions:Season chicken. Melt 3 tbsp. butter in pan with ½ minced garlic. Add chicken breasts and cook until they turn golden brown. Take chicken breasts out of pan. Add 3 tbsp. of butter to pan. Sauté mushrooms and remaining garlic. Add chicken stock, heavy cream and thyme. Add Asiago cheese. Then add chicken back to sauce and let simmer for another 15-20 minutes. (If you want the sauce a little thicker you can mix ¼ cup of warm water with 2-3 tbsp. of flour. Add thickening to sauce.)
