Earth Day Spinach, Apple & Kiwi Smoothie
I am not exactly the type that likes to frolic in the grass. I once thought about taking the kids to camp out in the back yard. That thought was quickly put out of its misery when my husband alerted me that he thought he saw a coyote in the woods behind our house. No, thank you. We didn't hike or camp when I was a child. If we traveled anywhere a Motel 6 or Holiday Inn would provide us shelter, not a campsite. Perhaps this is why I don't have a real affinity for saving the earth. But, I am trying to do better. We recycle daily and I have even thought about purchasing green products. Just as soon as I am able to depart with my house smelling like Pine Sol. Oh well, one step at a time I suppose. Our next step? Value the earth by eating more greens. This time instead of cooking greens I decided to blend them up and came up with something dee-licious! This way we can talk about the beauty of the earth and taste it at the same time!
Servings: 5 cups (For us it turned out to be 2grown ups, 1 teen and 1 growing six year old. The boy child wouldn’t try it….so more for the rest of us!) Prep Time: 2-10 mins (depending on if you buy pre-chopped fruit or not) Blend Time: 2-5mins Total Time: 4-15 mins
Ingredients:1 1/4 cup Greek yogurt 1 1/2 cup frozen pineapple 1 cup frozen kiwi 1 cup frozen green apple 2 cups spinach 2 cups ice (add a cup more if you see fit) 1/4 cup rice milk 1/4-1/2 cup of honey.... Or sugar (this is only if you've stumbled upon some really, really tart apples and kiwi - which I have before) Deseeded pomegranates (optional) [Cinnamon granola in picture]
Dump everything into the blender. Blend on 'Smoothie' until combined. Taste to see if you need any sugar.
