Easter Bunny Cupcakes
Do you and the family have plans for Easter? When I was younger we used to go visit my grandma, my mama’s mama, for Easter. We’d arrive Saturday afternoon to make sure we would be front and center with my grandma for church on Sunday. Afterwards we feasted on the Easter ham and whatever gossip us kids could take in as we went in and out of the kitchen for seconds. Today, the tradition has changed. Cousins have gotten married and unfortunately grandma has passed away. We no longer spend our pre-Easter day on the road traveling to sit with grandma in the front pew on Sunday. But, we are still with family. We meet up with cousins the day before Easter so that the kiddos can enjoy an Easter egg hunt and enough candy to last them to Halloween. I suppose it’s alright if traditions change or are just tweaked a bit. As long as we are with family.
Ingredients2 cups sugar 2 sticks softened butter 4 eggs 1 1/2 cup plain flour 1 1/2 cup swans down cake flour (or you can use all plain flour) 3 tsp baking powder 1/2 tsp salt 1 tsp vanilla extract 1 tsp lemon extract
Ingredients frosting: 1 1/2 cup shortening 2 cups powdered sugar 4-6 tbsp. milk 1 drop red dye (maybe two) [Half frosting, making one half white and place drops in other half to make pink]
Bunny ingredients: Pink and blue sugar pearls Marshmallows Pink sugar sprinkles Chocolate sprinkles
DirectionsPreheat oven to 350 degrees.
Cream together sugar, eggs and butter.
Mix together dry ingredients.
Add dry ingredients in increments with milk.
Pour 1/3 cup of cake batter into each cupcake tins. Bake for 18-20 minutes. Let cupcakes cool.
Once cupcakes cool add a pink layer of icing.
Then add a white layer.
Half marshmallows then dip cut side into pink sugar sprinkles.
