Eating Out…At Home: Shrimp Fettuccine Alfredo
Do you try to make your restaurant favorites at home? What’s yours? Pasta, burritos maybe stir fry? Mine switches from time to time, but an old time favorite is shrimp fettuccine Alfredo. All that tasty cream, cheese and shrimp….yum! I used to mess this recipe up at home for the longest until I realized that there is a reason why they sell ‘real’ block Parmesan cheese in the grocery store. I learned how to cook some of my restaurant favorites at home for a number of reasons. Mainly because when we first got married we were trying to save money. I may not be able to make it exactly like the restaurant, but I can say my version can be a close second (in some cases maybe even third). At any rate, making restaurant goodies at home has also changed the cooking game for me in other ways. I look for more than just getting a break from cooking out of the eating-out experience. Now I also want something I cannot put together in my own kitchen.
Ingredients:¼ cup butter 1 garlic clove finely chopped 2 cups heavy whipping cream 1 ½ - 2 cups shredded Parmesan cheese (the real cheese, not the stuff in the bottle) Salt and pepper to taste
Skewer shrimp and season (you can choose not to skewer, but it does make them easier to get off of the grill).
Melt butter and sauté garlic. Once garlic cooks awhile, be careful not to let it burn, add heavy whipping cream.
Whisk in cheese.
Add salt and pepper to taste (maybe a few shakes). Let simmer on low. Stir occasionally as cheese has a tendency to stick to the bottom.
Grill shrimp, should take about 7-8 minutes and boil fettuccine noodles.
Plate noodles, as much sauce as you’d like and top with grilled shrimp. Enjoy!
