It's the Fourth of July! Cupcakes, Creamy Dip & Mashed Potatoes

Do you have big Fourth of July plans?  Will grandma come with her pound cake?  Is Aunt Sharon bringing her seven layer salad?  I just love to have the family over for any kind of feasts.  The planning and preparation is a challenge.  But when it all comes together and you look around and everyone is having fun, it’s all worth it.  For this fourth of July I wanted to have red, white and blue show up in more than just the decorations.  I thought these red, white and blue recipes might just do the trick!

Try these Fourth of July inspired recipes, either if you are having a feast for a few or a lot.

 

 

 

Appetizer - Cream Cheese & Blue Cheese Dip with Bacon

 

Cream Cheese Blue Cheese Dip with Bacon

Ingredients

4 slices turkey bacon
1 cup sweet onion, coarsely chopped (1 large)
1 chopped red bell pepper
1/2 cup mayonnaise
½ cup sour cream
4 ounces cream cheese, cut up
4 ounces blue cheese, crumbled
Blue tortilla crackers

 

Directions

Cream Cheese & Blue Cheese Dip with Bacon

  1.  In oven cook turkey bacon until crisp – 15-25 minutes (depending on oven) at 350 degrees. Crumble bacon
  2. In a pan sauté onion and red bell pepper.
  3. Add mayonnaise, cream cheese, blue cheese and garlic. Stir to combine.
  4. Cover and cook on low-heat setting for 25-30 minutes or until cheese melts and mixture is heated through. Stir in bacon.
  5. Serve with blue tortilla chips.
 
 
 
 

 

 

Side - Creamy Bacon and Blue Cheese Mashed Potatoes

Creamy Bacon and Blue Cheese Mashed Potatoes

Ingredients

3 baked potatoes
3 slices turkey bacon
2 tsp. garlic powder
4 ounces cream cheese
½ cup blue cheese
4 tablespoons butter
Garlic powder
¼ cup heaving whipping cream

 

Directions

  1. Began boiling a pot of water.
  2. In oven cook turkey bacon until crisp – 15-25 minutes (depending on oven) at 350 degrees. Crumble bacon.
  3. Clean and peel potatoes.
  4. Place potatoes in water and boil for 25-30 minutes or until softened.
  5. Strain water from potatoes.
  6. Add to pot potatoes were boiling:  butter, bacon, garlic powder, cream cheese, blue cheese and heavy whipping cream.
  7. Add potatoes to pot and mash by hand or use a mixer if you'd like.
  8. Pinch of salt (the bacon and blue cheese are already salty, but add more if you feel it necessary) and pepper.
 

 

 

 

Dessert - Red Velvet Cupcakes

Red Velvet Cupcakes

Ingredients – Cupcakes (1 dozen and a half)


2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

 

Directions – Cupcakes (1 dozen and a half)

  1. Preheat the oven to 350 degrees. Line muffin pans with cupcake papers
  2. In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl (or mixer on low) gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
  3. Fill cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes. Remove from oven and cool completely before frosting.

Ingredients – Cream Cheese Frosting


1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar

Directions – Cream Cheese Frosting

  1. In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated.
  2. Remove 1 cup of icing before frosting cupcakes
  3. Use either a knife or piping bag to add white cream cheese frosting.
  4. Add blue dye to 1 cup of removed frosting and mix until you get the right shade of blue you are looking for.
  5. Use a knife or piping bag to add blue icing.

 

 

 

Dessert on the Lighter Side - Strawberry and Blueberry Yogurt Treat (for your guests who are not really into sweets or are perhaps watching their figure).

 

Strawberry and Blueberry Yogurt Treat

Ingredients (for two yogurt treats)

¼ cup plain yogurt
2 tsp sugar
1/3 cup strawberries
1/3 cup blueberries

 

Directions

Clean and cut tops off of strawberries and hull.
Clean blueberries.
Layer martini glass with strawberries, add yogurt and then blueberries. Repeat until you reach the top layer of glass.
Place in refrigerator for at least 20 minutes before serving.
