Snacks for Football Season: Creamy Chicken and Spinach Dip
I grew up in a family of football fans. Once September was in full swing just about every Saturday afternoon, Sunday and Monday night three pairs of eyes were glued to a screen to watch men padded from head to toe charge at one another. During a game my mama and daddy would joke around and debate football plays. My sister and I discussed clothes and celebrities in Ebony or Jet in between her yelling at football players or the referees. At any point in time during the game an ESPN worthy discussion between my parents and sister would take place on who might be traded or who was a shoe in for MVP. Despite growing up surrounded by football fans, I have only developed a vague interest in football. But, I do so love the football family time. I have married a football fan. I get a touch of nostalgia watching our children stand between him and his much awaited football game with pesky questions about plays, players and stories from the week about school. I have come to the realization that unlike my family I may never be a football fan. I will probably never know all of the football teams, let alone players and who is scheduled to play whom next. Needless to say I have also come to realize after all these years that my contribution to football is not in the realm of yelling at the players or the referees. What then is my contribution to football in this family? Providing the snacks. As long as the family is together and happy I am completely okay with that. I love spending time with my family no matter how that happens. While I may not be in love with football I am on the other hand a fan of a good munchie and this creamy spinach and chicken dip is a game time winner!
Ingredients Creamy Chicken and Spinach Dip
1 tsp salt 1 tsp black pepper
Directions Creamy Chicken and Spinach Dip
Chop chicken breasts into cubes and set aside.
Add garlic and spinach. Let simmer for about 2 minutes or until spinach has reduced in size. Add heavy whipping cream, salt and pepper.
Add ½ cup of mozzarella cheese and 1 cup of parmesan cheese.
Stir in chicken cubes.
Pour mixture into baking dish. Sprinkle remaining mozzarella and parmesan cheese on top.
Bake in oven until cheese has completely melted on top.
Serve with pita or tortilla chips and enjoy!
