Football Potato Pancakes

 
What are your family’s weekend plans? Is your favorite team in the Super Bowl this weekend?  If so then your family is probably on a football high.  I know mine is.  Since Monday the kiddos have been asking if we will forgo regular Sunday dinner of gravy and rice for football watching snacks.  I haven’t committed one way or the other.  I like to keep them guessing, although they are fully aware that I am a sucker for food requests.
I may be the only one in the house not waiting anxiously for the big game, but I am with the family on waiting for the good eats!  This football week I am adding potato pancakes to the mix.  We’re gonna have these for breakfast to set the Super Bowl mood for the day.  I plan on pairing these with a nice soft scramble egg and plenty of ooey, gooey cheese! Yum!

Ingredients:

3 medium sized potatoes
1 large egg
1 half medium onion chopped
2 tablespoons flour
3 tsp salt
1 tsp garlic powder
1 tsp black pepper
Canola oil

 

 

 

Directions:

 

Grate potatoes and then rinse.  Use paper towel to dry off as much as possible.

Add egg and seasonings.  Then add flour.

Form potato mixture into patties or you can form into a cookie cutter of your choice. (If you choose to make shapes cover with saran wrap and place in freezer for 30-45 minutes.)

Heat a large skillet over medium-high heat. Add canola oil.  Fry each potato pancake until golden brown.  Serve with dipping sauce and cheese of choice and enjoy!!
