For Your Budding Vegetarian: Veggie Bean Tortilla
Over the Holidays the resident teen came home and announced that she would no longer be eating meat! Starting January 1st she would begin her new life as a pescatarian. What? Excuse me? It's not that I have an issue with her not eating meat. In fact from time to time I think about going back to my non meat days. When we were a veggie protein eating family and the highest we went up the carnivorous food chain was eggs. Back then I was discouraged to lead a non-meat life. My family thought I was crazy. A plate full of veggies seemed empty and sure to lead to hunger hours after dinner. Well, now that my daughter wants to cut out all meat – except fish – from her diet I am not going to discourage her. But still her chosen change in diet has caused a riff in my dinner plans. At first I didn't make any major dinnertime adjustments. The resident teen changes her mind like I change TV channels on a commercial break. But here we are in week number 3 of January and she's still not eating meat. Before I worry myself over the thought that her bones may start wasting away I have had to dig into my old veggie recipes. This one for sure is a winner, even for those souls who eat meat.
Servings: 1 teen (for lunch and dinner) Prep Time: 5 Cook Time: 15 mins Total Time: 20-25 minutes
Sauté onions, bell peppers and mushrooms in butter. Sprinkle salt, pepper if you so desire. Mix onions, bell pepper and mushrooms together. Once all veggies are cooked, cover with cheese slices. Place fresh spinach on tortilla. Add half of black beans. Place cheese covered veggies over spinach and beans. Heat tortilla in pan or get fancy with it and finish it off on a grill - a George Foreman will do!
