Apple & Strawberry Heart Shaped Turnovers
Did you wear red today? My little cousin (well really she’s not all that little any more seeing that she’s almost thirty) called me last night and reminded me that I needed to honor research and support for those with heart disease by wearing red. ‘Make sure the kiddos wear red too!’ she told me. It was nine o’clock at night, I’d already ironed the kiddos clothes for the day but you better believe that I went back into their closets and found something red for them to wear. Not just because I love my cousin, but also because of her courageous fight with heart disease. Sometimes watching her make her way through heart disease I feel helpless. Sure I can offer prayers and visits, but it never feel as if it’s enough. There’s always more love, encouragement and endurance I wish I could lend. So when she called me to tell me to make sure we all wore red to support research for heart disease I jumped on it. And not only did we wear red but I also was inspired to make these heart shaped pies. I know frying isn’t exactly healthy for the heart, but one – it’s the weekend and two – I did make a baked version too. Either way they are both filled with a lot of love!!

Ingredients: Strawberry filling
1 16 oz. package of fresh strawberries 2 tbsp. butter 1/2 cup white sugar 1/2 cup water 1 tbsp. lemon juice 2-3 tbsp. cornstarch
Directions: Strawberry filling
Cut stem off of strawberries and hull.
Add sugar, water and lemon juice and bring to a simmer.
Add a tablespoon or two of simmering strawberry filling to cornstarch. Mix well and then pour cornstarch mixture into pan. Let simmer a few minutes more and then remove from heat. Let cool for about 15-20 minutes.
Directions for heart shaped pies:
Cut pie dough and then place cut out shapes in refrigerator for 10-15 minutes. Place a tablespoon (depending on heart cut out sizes) of filling in middle. Place another heart shaped cut out on top.
Seal edges of heart shapes with fork. Poke hole in the middle of pie.
Place pre-cooked pies back in refrigerator for about another 10 minutes. And begin to heat oil. When oil is ready remove chilled pies from refrigerator and fry until golden brown.
