Fried Chicken Biscuits
I don’t know about you, but where I am from it is perfectly normal for people to eat fried chicken as early as 7 o’clock in the morning. Of course there is one rule. The fried chicken must be in between a biscuit in order to avoid crude side eye. Each week I do my best to try and keep our food out of frying oil. But by Friday all bets are off. You might not only find fried food on our menu at dinner, but breakfast too. My three look forward to chicken biscuits like I used to look forward to restaurant made sausage biscuits. Every time my mama, daddy and sister and I packed up our beige Volvo to make the hour trip to my grandmas, we stopped to get a sausage biscuit before we left town. Breakfast out to eat was something that we did not get very often, special occasions only. Back then going to grandmas qualified as something special! For our kiddos the grandparents don’t live that far away. But luckily for them in our house weekends count as a special occasion! Side bar - If I have a few pieces of fried chicken breast leftover from dinner I like to make biscuits the next morning, warm up the chicken and in less than thirty minutes the kiddos can take a biscuit out the door with them to church. These work great for a long day at the soccer field too!
3 chicken breasts (about an inch thick) 1 cup flour 1 tsp Tony Chachere’s Famous Creole Seasoning 1 tsp onion powder 1 tsp lemon pepper 1/2 tsp salt 1 tsp garlic powder ¼ cup buttermilk 1 tablespoon hot sauce Biscuits 2 cups self-rising flour 1 to 1 ½ cup heavy whipping cream 1 tablespoon sugar 2 tablespoons melted butter Also needed: Frying pan Canola or vegetable oil Wire rack and/or toweled baking pan
Directions:Cut chicken breast in half to get six pieces. Then cut the half’s in half’s. You should end up with 12 2-3 inch sized pieces of chicken. Mix flour and seasonings. Then mix buttermilk and hot sauce. Place chicken pieces into buttermilk and hot sauce then into flour. Place floured chicken onto plate or pan. Heat oil and then place chicken into hot oil. Fry until golden brown. Let chicken drain on paper towels or wire rack. Once chicken is done frying make biscuits (or if you prefer your biscuit a little savory try sandwiching your fried chicken breast between these cheddar biscuits).
