Good Gouda Grilled Cheese Sandwich

 
What’s the first thing you learned to cook for yourself?  The first time my mama let me fire up a stove it was to make a grilled cheese sandwich.  I’d made sandwiches before.   In my taste bud opinion I’d mastered the ham, turkey and peanut butter sandwich.  Now it was time for me to move to the next level. Really to me the next level was frying chicken, but my mama told me I had to start out slow.  And slow to her meant a grilled cheese sandwich.  I can dig it.
I still love to make a grilled cheese sandwiches for the kiddos today.  It is a quick snack to make AND you can change it up a million ways.  The kiddos can have a version and so can I.  My version includes cucumbers and mushrooms – which the newly pescetarian teen likes too!

Servings: 1grown veggie loving adult or teen or two veggie loving little people
Prep Time: 2-5 mins
Cook Time: 5-10 mins
Total Time: 15 mins

 

 

Ingredients:

Texas toast (or wheat bread)
Chopped cucumbers
Chopped baby Portobello mushrooms
Gouda Cheese slices
Muenster cheese slices (to help the Gouda be more cheesy)
[Or... you can just use all provolone if you are not a fan of Gouda or Muenster cheese)
Butter

 

Directions:

 

Heat griddle or pan.  Add 2-3 tablespoons of butter. Cook cucumbers and mushrooms for a few minutes.  Season with a little salt and pepper too if you’d like.

Places slices of cheese on opposite sides of bread. Add cucumbers and mushrooms.  Melt another 2-3 tablespoons of butter on the griddle.  Add top layer and flip after about 3-5 minutes.  Cook until both sides are golden brown.
