Grilled Cheese and Bacon Sandwich
What’s your I’m-in-a-hurry- and- the-kiddos-have-got-to-eat-meal? Last week I was in the position where I had literally 25 minutes to come up with a meal. I used to stop by a fast food drive thru at moments like this. But then there came a time when I had to learn how to budget – and spending $25-$30 at a drive thru began to seem ridiculous when I could spend that same amount at the grocery store and come up with three meals. So when I am in a bind I try to think, is the $25-$30 worth it – especially considering the amount of time spent in the drive thru is about the same amount of time I could spend in the kitchen cooking something up? Nope. Times like these I turn to one of my no-fail grilled cheese recipes. I figure with the turkey bacon, cheese and bread I have covered at least three of the major food groups. All I have to do is add a can of vegetable soup and I am completely nutritionally covered – and it only took me less than 30 whole minutes! Winning!
Servings: 2 adults, 1 teen and 2 almost still little people (ages 8 and 6) Prep Time: 2mins Cook Time: 5-10 mins Total Time: 15 mins
Ingredients:10 slices Texas toast or wheat bread 5-10 slices Sharp cheddar Cheese slices 10 slices of turkey bacon Butter
Heat griddle or pan. Add 2-3 tablespoons of butter.
Places slices of cheese on opposite sides of bread.
Melt another 2-3 tablespoons of butter on the griddle. Add top layer and flip after about 3-5 minutes. Cook until both sides are golden brown.
