Mama’s Very Own Omelet
As a mama I am willing to shiver in the freezing cold and rain, take off my coat and give it to my children if they don’t have one. As a mama I am willing to sacrifice sleep for the next umpteen years of my life to make sure the kiddos are taken care of before I go to bed and when I wake up early in the morning. And as the mama I am more than aware that if there is one last bite left of anything, even if it’s off of my very own plate, and one of the kiddos looks at me and asks, either with their eyes or mouth ‘Can I have it?’ I am forced to give it up. But, this week the kiddos are vising grandparents. And what does this mean? First, not much on the relaxation front since I still have work to do. But there is one thing I do relish in, the fact that I can cook something and eat it hot. And that I can put what I want in it because I don’t have to worry about who doesn’t eat what. And, most importantly, that I can eat every- last- bite. No sharing. Mama can have it all! The kiddos like plain eggs, no cheese or nothing! So, first up on the menu? My very own omelet with all the goodies I love to have in it and not one complaint to be heard while I munch every-last- bite!
2 large eggs Pinch of Tony’s seasoning Pinch of Black pepper 1/3 cup sharp cheese ½ cup spinach 1/3 cup tomatoes 3 slices sliced turkey 3 sliced mushrooms
Heat pan to medium to high heat.
Melt two tablespoons of butter, and then add mushrooms and turkey. You can add any pepper or salt here to if you’d like – I did.
Once turkey and mushrooms brown remove from pan. Add two more tablespoons of butter. Pour in beaten egg. Add cheese, spinach, mushroom and turkey, tomatoes on one half of egg. Once the inside begins to cook to your satisfaction (if you like your eggs hard then let omelet cook until just about done all the way) fold other half over ingredients.
