Mini Breakfast Omelets
There's nothing like being prepared, don’t you agree? With the kiddos it's even more important to have all my ducks lined up if I want any chance of getting somewhere on time. And the best way to make this happen is prep, prep and more prep. As far as prepping goes I don’t mind putting book bags by the door at night, and I can even deal with ironing clothes or fixing lunch boxes the night before. But breakfast? Forget about it. When I finish closing down the kitchen after dinner, I don’t feel like leaving a corner of my newly clean kitchen space to make breakfast. But, I must admit on the rare occasion that I have enough time in my schedule to prepare breakfast I do feel like a winner all day (sometimes it's the little things you know?). This egg omelet recipe is about as easy as breakfast prepping can get. I can whip it up in about five minutes before bedtime, put it in the fridge overnight and then in the morning pop it in the oven while I stumble around the kitchen trying to make lunches...I didn't make the night before. What can I say? I'm a work in progress.
Servings: 24 mini omelets Prep Time: 5 mins Cook Time: 8-10 mins Total Time: 13-15 minutes
Ingredients:3 large eggs 2 tbsp. melted butter Salt and pepper or Tony’s seasoning 1/4 cup heavy whipping cream or milk
Suggested Added Goodies: Sharp cheese Mozzarella cheese Onions Green onions Turkey bacon Turkey sausage crumbles Spinach
Directions:Preheat oven to 350 degrees. Crack eggs and add seasonings of choice. Whip eggs and then add heavy whipping cream or milk. Brush mini muffin tins with butter. Add 1 tablespoon of egg mixture to each mini muffin tin. Add goodies of choice. Bake for 8-10 minutes and then eat up!!
