Organic Baked Chicken Nuggets
What are the typical lunch or after school snacks you usually have for your kiddos? Our favorite go-tos are turkey and peanut butter and jelly sandwiches. They take like two seconds to put together and nine times out of ten the kiddos will say yes to it when offered. But every now and again I find a way to etch out time so that I can offer a special treat for the kiddos lunch or after school snack. It’s true, a lunch or snack of this caliber does take a minute or two longer, but it’s so worth it. Like these baked organic chicken nuggets. I usually pick up a box at the health food store. Sure it takes me like a millisecond to take them out of the freezer, bake in the oven and put in the kiddos lunch bag. But, they are also expensive and one box is good for a round of one lunch or snack – that’s it. These baked chicken nuggets are not only kid approved (mine liked them) but they are also way cheaper than the store bought kind, it’s just that instead of money the payment for these savory treats is time… well spent that is!
Servings: 1 teen girl and 1 growing seven year old boy and 1 6 year old girl. (Two Times) Prep Time: 30 mins Cook Time: 15-17mins Total Time: 1hour
Tony Chachere’s Famous Creole Seasoning 2 teaspoons garlic powder 2 large eggs 1 cup Italian breadcrumbs 1 teaspoon salt 1 teaspoon pepper 1 ½ teaspoon garlic salt 2 teaspoons onion powder
Cut chicken breasts into 2-inch sized pieces.
Melt butter and put melted butter in a bowl or dish for dipping. Whisk eggs in a bowl.
In a medium bowl, mix together the bread crumbs and seasonings.
Dip chicken pieces into the melted butter first, then coat with flour mixture. Dip floured chicken into egg and then coat with Italian breadcrumb mixture.
Place the well-coated chicken pieces on a wire rack sprayed with cooking spray. Place rack on cookie sheet lined with parchment paper. Bake for 15-17 minutes. Turn chicken nuggets after 10 minutes.
