Quick & Easy Pizza Cupcakes
How do you spend post-Thanksgiving day cooking? Since I am more of a fan of cyber Monday I like to spend the day after spending almost 36 hours in the kitchen - chopping, stirring, and shooing out any one who dared to ask me how much longer - in my favorite socks with my tired feet perched nicely atop any nearby couch or ottoman. I do so love this time of year but it takes a lot of effort and I am tired. And I don’t just mean physically, my taste buds are also tired. Well, of heavy food that is. We will eat Thanksgiving leftovers for lunch. Then that’s it. I don’t want to see another collard green or rice and gravy today. After the mad dash to get Thanksgiving dinner on the table I want something fun on my taste buds. And my hands and feet also prefer something easy to make. I really would rather not step into my kitchen at all today. I could survive off of cereal and go to bed without a second thought. However the kiddos (and possibly the hubby) would consider this a slight form of dinner insanity. It’s my fault I’ve spoiled them with too many hot meals. So… enter the idea of pizza cupcakes for dinner. The dough I got from the grocery store and the sauce I had saved in the freezer! If you make the dough ahead of time or buy it already made from the store then it will take a millisecond of Thanksgiving dinner time to make. And then, if you’re like me, you can return your feet to their previous perched position.
Pizza dough Pizza sauce Turkey pepperoni sliced in half Chopped mushrooms Chopped onions Mozzarella cheese Muffin tin Olive oil
Preheat oven to 425 degrees. Roll out dough. Use pizza cutter or knife to make squares, about 3 – 3 ½ inches long and wide. Spray each muffin tin with olive oil you use paper towel or brush to spread olive oil if you don’t have the spray version. Place cut pizza squares into muffin tin and bake in oven for about 5-7 minutes. Add sauce, veggies, turkey pepperoni and then cheese. Bake in oven at 425 degrees on lowest rack for 10-15 minutes.
