Red, White & Blue Fruity Dessert
I confess I have a sweet tooth. I’ve been trained to look forward to the end of my meal just for the dessert. In my defense I inherited my sweet tooth from my daddy and my mama. When you grow up in a house that makes a special place for my daddy’s candy bars and my mama’s pound cakes a sweet tooth just is bound to take root. Cookout time is heaven for sweet lovers like me. Not only is there dessert but there’s an entire table dedicated to it, full of apple pies, peach cobblers, cupcakes and banana pudding. I figure this year, as my sweet teeth age and fight off cavities and root canals I may need to start thinking about other options on the dessert table. Like fruit. Oh yes, I tend to forget fruit can very well be a dessert too. It won’t be the same as a slice of sweet potato pie. But, it’s a start to uprooting my processed sugar sweet tooth.
1 cup chopped strawberries 1 cup blueberries 1 cup blackberries 1 cup raspberries Simple syrup (optional – for fruit that is a bit tart)
Directions:For whipped cream: Place mixing bowl in freezer for about 15 minutes. Remove and add heavy whipping cream and sugar. Mix on high until cream begins to thicken. Add vanilla extract.
For fruit cups: Add a few teaspoons of simple syrup to fruit if it is a bit tart.
Add one layer of fruit then whipped cream and then another layer of fruit. Add granola too if you want!
