Remixed Dinner:Taco Pizzas

Do you ever run out of ideas for dinner?  OMG! At least three times a week come dinner time I am faced with thinking, ‘what in the world am I gonna cook?’ I once worked in a place where we used to barter our products for the food at a nearby Mexican restaurant.  There was one person I worked with who refused to order anything.  Her thinking was that the restaurant just remixed tomatoes, lettuce and cheese.
Whether or not she’s right or wrong, it’s brilliant if you ask me. I’m digging it. Why not use ingredients from the same dish, that I know the family will like?   This week I‘ve tried to tap into this brilliance and came up with taco pizzas.  Hopefully no one will notice they are eating the same dish they had last week.

Enjoy!
