Remixed Dinner:Taco Pizzas
Do you ever run out of ideas for dinner? OMG! At least three times a week come dinner time I am faced with thinking, ‘what in the world am I gonna cook?’ I once worked in a place where we used to barter our products for the food at a nearby Mexican restaurant. There was one person I worked with who refused to order anything. Her thinking was that the restaurant just remixed tomatoes, lettuce and cheese. Whether or not she’s right or wrong, it’s brilliant if you ask me. I’m digging it. Why not use ingredients from the same dish, that I know the family will like? This week I‘ve tried to tap into this brilliance and came up with taco pizzas. Hopefully no one will notice they are eating the same dish they had last week.
Servings: 2 grown people, 1 teen girl and 1 growing eight year old boy and 1 6 year old girl (Enough for dinner and leftovers to send with the kiddos for lunch) Prep Time: 5 mins Cook Time: 5mins Total Time: 10 – 15 mins
4 oz. vegetarian refried beans 1 cup sharp or Monterrey Jack cheese 1/2 cup diced tomatoes 1/4 cup onions 1 cup shredded chicken 1 cup shredded spinach 1/2 yellow corn Regular or whole wheat Tortillas Butter
Spread veggie refried beans on tortilla. Add toppings of choice. Melt butter in skillet or electric griddle on medium to high heat. Place tortilla on buttery heated skillet. Let stay until tortilla turns golden brown on bottom and cheese has melted. Add more goodies, cut into fourths and enjoy!
