Remixed Leftovers: Grilled Fish Tacos

This week marks the official last lunch school box packed for the school year!!  Can you say excited?  I know, I could easily just hand the kiddos a few dollars and ask the teacher to direct them to the hot lunch line.  But….I am trying to do my best to fight the preservative, dye and hormones roaming around on menus.  I don’t score a perfect 100 as organic food is expensive.  I do my best.  But let me tell you 5 days a week of trying to dress up a lunch box can make you rethink your life decisions. 
After this week I get a school lunch break.  Ten whole weeks of pulling whatever leftovers are in the refrigerator and telling the kiddos to ‘make it happen’. They’re old enough now plus I need all of those ten weeks to think of something else to do with lunch.   What are we starting with? Leftover haddock for fish tacos!




Servings:  1 teen girl and 1 growing eight year old boy and 1 6 year old
Prep Time: 5-7 mins
Cook Time: 2-5 mins
Total Time: 10-12 mins






Grilled Fish Tacos

2-3 pieces of haddock
Onion powder
Chili powder
Lemon pepper
Garlic salt
Soft taco shells or tortillas
Topping of choice:
Chopped spinach
Chopped lettuce
Shredded Asiago




Season fish and sauté fish in melted butter.
