Say Cheese! Homemade Stove Top Macaroni and Cheese
I believe I met my first box of stove top macaroni and cheese when I was in middle school. While visiting a friend I looked into her cabinets and spotted a box with a picture of a dish of macaroni and cheese on the front. How on earth, I thought, could a decent dish of macaroni and cheese come out of a box and not the oven? I’d seen the box on commercials, and in the store, but never in a cabinet. Not my mama’s, not one auntie’s kitchen and never at grandmama’s house. I later learned in life that there are people who have never, ever, ever had baked macaroni and cheese. Such a shame! I do my best to eat healthy and to have the kiddos eat healthy. There are times, however, when we indulge in the occasional preservative and dye filled treat. I’ll spare you the details of my nonsensical system…but overall let me say that I do have ‘standards’. For example, in my mind it’s okay to indulge in a candy corn or two (as naughty as they sugary are) but I draw the line at macaroni that I am supposed to sprinkle with powdered cheese that comes in the same type packet as towelettes. The kiddos of course have other standards. When they see friends and cousins devouring a boxed stove top mac and cheese they want in on some of the action. My response? Find another alternative. My version of stovetop macaroni and cheese may take a little longer than the box version, but it’s oh so worth it! Now, with all of the cheese and butter in this dish it may not exactly qualify as healthy. But considering the fact that you can name all of the ingredients and count them using only one hand and a few fingers I say that this dish definitely counts as healthy or heathier at the very least.

Servings: 2 grown people, 1 teen girl and 1 growing seven year old boy and 1 6 year old girl. Prep Time: 5-10 mins (less if you buy pre-shredded cheese) Cook Time: 30-35 mins Total Time: 35 mins
Ingredients:Olive oil Salt 1 cup macaroni noodles 4 tablespoons butter 1 cup milk or heavy cream 2 eggs 1 ½ cup shredded extra sharp cheese ½ cup shredded parmesan cheese (or sub with extra sharp cheese) 4 oz. softened cream cheese
Boil noodles in olive oil and salt.
Once noodles are done drain and place butter in hot noodles. Then set aside.
In pan heat milk. Whisk in eggs quickly (not pictured here – something went wrong with my pic) or eggs will become scrambled…believe me I know. Add in cream cheese.
Mix cheese sauce with noodles, salt and pepper to taste and enjoy!
