Southwestern Chicken & Andouille Sausage Rolls
What does your family do on Saturday nights? You know how you hear about families who gather around on Saturday nights for game night to play Twister and Uno until they drop. Well, that’s not us. More than likely on Saturday we all snuggle up to a TV and wait for a good movie to come across our screen. Sometimes we watch a movie together, other times in groups. It just depends on what we are all interested in. The goal at any rate is to rest. One Saturday night we tried to play a family game of Twister. All the children ended up whining about five minutes in and the oldest didn’t really see the point of a game where you fight to reach over somebody. So, I’ve concluded that after we have run around at soccer games and caught up on errands on Saturday the only thing we have energy for is a good Saturday meal and a TV to watch… that's what we're interested in.
Sauté vegetables for about 5-7 minutes.
Remove vegetables from pan and add chicken sausage and chopped chicken and seasonings. Cook until brown.
Add cheese, chicken sausage and chopped chicken to vegetable mixture.
Place filling in the middle of burrito. Then roll, making sure to fold in the ends.
Heat pan of oil. Place each roll in and fry until golden brown. Makes 10 nice sized southwestern roll ups.
