Spinach & Blue Cheese Chicken Burger
Do you eat differently than when you grew up? If there was a cookout there used to be a time when I would suck down a rib with the best of them. You better believe there was always space saved on my plate for a juicy pulled pork sandwich. Well, about fifteen years ago I stopped saving room on my plate for pork and beef became unwelcomed no too long after. Now when we attend family cookouts the kiddos and I face a slight dilemma when it comes time to eat. With a grill full of pork the kiddos and I are oftentimes left with nothing but the sides to munch on. It took me a few family functions of nibbling on macaroni and dinner rolls before I finally figured out what to do. When it comes to cookouts instead of filling up on potato and pasta salad we bring our own meats and ask for just a tiny, un-pork tainted, spot on the grill. Okay, we normally can’t get an untainted pork spot on the grill, but at least the meats we bring get cooked. This time we are bringing spinach and blue cheese chicken burgers. And we are even willing to share with the pork eaters in the family. 🙂
Ingredients:1 lb. ground chicken 1 handful chopped fresh spinach ½ cup blue cheese Seasonings of choice Optional: Lettuce Red onion Provolone cheese
Mix together ground chicken, spinach and blue cheese. Make patties and season meat. Place patties on hot grill, electric griddle or pan. If on electric griddle or pan make sure to melt a few tablespoons of butter first.
