Strawberry Lemon Pop Tarts


What’s the kiddo’s favorite afterschool snack?  Fruit, granola bars or perhaps some yogurt? For my kiddos? Yeah right.  At first I had to remind my three that an afterschool snack does not mean a full fledge meal.  It took some time to straighten them out on wanting a fast food combo after school, a desire that developed as a result of the grandparents helping me and the hubby with car pool duty.  I’ve finally gotten them to the point where they can expect their after school snack to be no more than a half a sandwich with maybe some chips.  
Every once in a while I will allow them a special afterschool treat.  In this case it’s pop tarts, strawberry lemon pop tarts.  I know, I know they are full of sugar, preservatives and dye. But wait, not these ones.  These pop tarts may contain some sugar, okay maybe a lot if you include the glaze, but still they are at least a healthier version than the ones with infinite shelf life.  Plus, I don’t give these too often while we work on being satisfied with trail mix and granola topped yogurt afterschool.




Servings: About 12 pop tarts (depending on how big you make them)
Prep Time: 30 mins (dough), 10 mins filling, 2 minutes icing
Cook Time: 20-28 mins
Total Time: about an hour


Ingredients: Strawberry filling

 1 16 oz. package of fresh strawberries 
2 tbsp. butter
1/2 cup white sugar
1/2 cup water
1 tbsp. lemon juice
2-3 tbsp. cornstarch

1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter, divided
1/4 cup ice water
1 egg, beaten

 Pop Tart Icing:


Strawberry Lemon Pop Tarts

1 cup powdered sugar
1-2 tbsp half and half
½ tsp lemon extract (or you can use vanilla too if you’d prefer)





Directions for Pop Tarts:

Preheat oven to 350 degrees.
Cut out pop tart shapes.  Word to the wise…make sure you when you are finished you have even pairs.

Place filling in the center.  I like a lot of filling so my pop tarts always spill over.  But if you’re not going for that look place filling in the center and leave enough room around the edges.

Top off pop tarts and seal with fork.  Then brush with egg wash (aka your scrambled egg).

Place in oven and bake for 25-28 minutes.

Let pop tarts cool and then add icing and enjoy!
