Does your family like certain fruits or veggies in the summer? As the season changes so do the fruits and veggies that make it to our table. One of the best things about having summer on the horizon is that strawberries start to reappear in the grocery store - real strawberries, not frozen or forcefully grown. Strawberries remind me of not only summertime but also of when my parents and I traveled out of town and we got to eat at our favorite cafeteria restaurant. It was there that I was introduced to strawberry shortcake. Today, just me and my girls like to eat strawberries by themselves...and sometimes we like to enhance the flavor of strawberries with whipped cream and cake!
1 1/2 stick butter 1 1/2 cup sugar 4 egg whites 2 3/4 cup flour 4 tsp baking powder 3/4 tsp salt 1 1/2 cup milk 1 tsp vanilla 1 carton strawberries 1/3 cup hot water 1 tbsp sugar
2 cups heavy whipping cream 2-4 tbsp. sugar
Preheat oven to 350 degrees.
Mix butter and sugar.
Add flour and milk in parts.
Bake for 20-25 minutes. Let cool on wire rack.
Cut strawberries – add a little simple syrup (Add 1-3 tbsp. of sugar to 1/3 cup of hot water) if you feel they need a little more sugar.
For whipped cream: Place mixing bowl in freezer for about 15 minutes. Remove and add heavy whipping cream and sugar. Mix on high until cream begins to thicken.
