Summer Splurge: Buffalo Wonton Bites
What does summertime mean to you? Vacation? More time outside to play? Perhaps a splurge or two? I like splurges, especially during the summertime and especially when they’re fried and come with a sauce. Actually I can eat fried saucy stuff year round. But I try not to in an effort to be healthy. So when I need a reason (ahem excuse) they are usually not hard to find. Sometimes it’s the weekend or a special occasion. Today it’s summer. Summer, in my humble opinion, is a great reason to break out a splurge in the form of these wonton buffalo bites.
2-3 shredded chicken breast Seasonings of choice or garlic powder, pepper and garlic salt 1 egg 1 cup buttermilk Blue cheese or Mexican four cheese Wontons Canola or vegetable oil
Sauce: 1 1/2 cup hot sauce 6 tbsp. melted butter 1/2 cup vinegar Breading: 1/2 cup flour 1 cup Italian breadcrumbs 1 tsp garlic powder 2 tbsp. onion powder 1 tsp Tony’s seasoning 1 tsp garlic powder
Season chicken breast with garlic powder, pepper and lightly with garlic salt. Melt butter then add hot sauce and vinegar. Shred chicken. Half buffalo sauce. Pour one half into bowl of shredded chicken. Place about a tablespoon of chicken and blue cheese in the middle. Wet edges of wonton, fold over and seal together. Mix together buttermilk and egg. Then put together flour mixture. Place wonton in buttermilk and then flour mixture. Place battered wontons into refrigerator for about 10-15 minutes. Heat oil. Place wontons into hot oil and fry until golden brown. Serve with ranch, blue cheese dressing and remaining hot sauce. Enjoy!
