Super Delicious Turkey and Noodles

Do you know what a turkey neck is?  They are just what they sound like and I only really use them when I am making cornbread dressing.  But, not today. When I was pregnant, with each and every one of my kiddos, I craved turkey and noodles.  My mama would make it for me, primarily because food always tastes better when my mama makes it, but also because I didn’t know how.  My mama’s turkey and noodle recipe doesn’t require turkey breasts, or even an entire turkey.  It calls for turkey necks which she stewed for forever in order to get the thin shreds of turkey to separate from the bone.  Delish!
But this time I added a twist, to add just a little more turkey…drum roll… I also threw in a turkey wing.  Turkey wings are not hard to find. But turkey necks?  They usually only make an appearance in abundance during Thanksgiving and Christmas.   Fortunately they come like a million in a pack.  Or at least it seems that way to me.  I froze a few after Thanksgiving and decided on this cold day to bring them out.  And guess what? I wasn’t the only one saying delish!

Servings: 2 grown people, 1 teen girl and 1 eight year old boy and 1 6 year old girl (2 times!).
Prep Time: 10-15 mins
Cook Time: 3 and half hours (Winner! You can walk away and do other things while this cooks)
Total Time: About 4 hours





1 turkey wing
3-4 turkey necks
Seasonings of choice or:
 Tony Chachere’s Famous Creole Seasoning
Onion powder
Garlic salt
Garlic powder
Black pepper
1 cup celery (about 3 stalks)
1 cup onion
Olive oil
2 cups chicken stock
2 cups of water
2 tablespoons flour
1/4 cup warm water
2 cups egg noodles
1 boiled egg (optional)




Chop onions and celery.
Turkey and Noodles
Sauté onions and celery in butter and olive oil.
Turkey and Noodles
Season turkey necks and wings.

After celery and onions cook down add 1 cup chicken stock, turkey necks and wings to pot.

Let simmer until meat begins to fall off bones, 3 hours at least.

Let cool and separate meat from bones.

(Note: if you want a boiled egg in this, here's a good time to start boiling)
Add 1 cup chicken stock.  Mix water and flour mixture (aka thickening) and add as well.

Add egg noodles and let simmer for about 20 minutes.
