Breakfast Sandwiches: 4 Ways to Not Get Bored with Turkey Bacon and Sausage

 
 I’ll admit it. Sometimes I get stuck in a breakfast rut.  For the longest I served up grits with turkey bacon and sausage for a school breakfast, oatmeal making an appearance on the menu here and there.  I make grits mostly because it’s filling, but partly because in about 2-3 minutes I can throw in a few tablespoons of grits, fill the pot with a pool of water, add some salt and a pat of butter and go on about my mama morning business.   When the kids began protesting grits for breakfast at first I dug my feet in and refused to change a thing.  Who were they to ‘demand’ something else?  People who offer no contribution to the grocery bill?  Their pleas may not have worked, but their refusal to eat breakfast did.   So I am testing out breakfast ideas that work for a fast-paced school morning and are at the same time, wanted.  
My/our new love: breakfast sandwiches.  Breakfast sandwiches allow me to flip turkey bacon, sausage and eggs four different ways.    I am not completely giving up on grits, they will just take a two or three day backseat during the week if need be.  The kiddos can groan all they want, but grits will remain in the breakfast rotation. 
 
Servings:  1 teen girl, 1 growing seven year old boy and 1 6 year old girl.
Prep Time: 5 mins
Cook Time: 30 mins (Winner! You can walk away and do other things while the turkey bacon and sausage cook in the oven)
Total Time: 35 mins

 

 

Ingredients:

 

Breakfast Sandwiches turkey bacon and sausage

2-3 eggs
Tony Chachere’s Famous Creole Seasoning (or just salt and pepper)
4-6 pieces turkey bacon
2-3 pieces of turkey sausage
Wheat or white bread slices
Wheat bagel
Burrito
Shredded sharp cheese
Sliced cheese (optional)

 

 

 

Directions for Turkey Bacon:

Cook turkey bacon and sausage.
I believe turkey bacon tastes better, cooks evenly and gets crispier in the oven.  I’m just saying.  I like to put a few pieces of turkey bacon in the oven at 350 degrees for 15-20 minutes, depending on your oven.  I’ve used both a regular oven and a toaster oven and my toaster oven cooks faster.
Season and scramble eggs while turkey bacon and sausage cook.  Set aside while you finish morning duties.
Once turkey bacon and sausage are done toast bread or bagel.  Or if you are making a burrito this is the time to heat your pan (see below for burrito assemble directions).
Assemble sandwich and enjoy!!

 

 

 

 

 

Directions Breakfast Burrito:

 

Breakfast Sandwiches turkey bacon and sausage

 
Wrap tightly and then place in pan on medium heat, 2-3 minutes on each side, for cheese to melt. 
 
Fill burrito with ingredients of choice in the middle (soft tacos work just as well).

Directions Breakfast Sandwich or Bagel:

 

Toast bread or bagel to the kiddos desired crunchiness with cheese on one side.

Note: The crusts are cut off of this sandwich for no particular reason other than I am (sometimes) a sucker for a six year old who asks me to.

 

 

NOTE: All versions of the breakfast sandwich are also great for wrapping in foil and eating on the ride to school.
