Grilled Chicken Salad & Sandwich with Home Cut Fries (Yum!)
It’s officially hot. For the past week we have hit temperatures of 90 degrees or more. On days like this I am not the first one to want heavy gravy and rice for dinner. Instead I prefer something light. Unfortunately my appetite isn’t always the same as the kiddos. On these occasions I opt for a compromise. I look for recipes where I can cook one thing but vary it. Grilled chicken is perfect for this. I can use the grilled chicken to make a sandwich for the kids and a salad for me. Sweet! Servings: 2 grown people, 1 teen and 2 little people. Prep Time: 20 mins (Realistically, with kids around maybe 30 mins) Cook Time: 45 mins -1 hour Total Time: 1 hour and 5 mins (Realistically, maybe 1.5 hours with kids around)
¼ head of lettuce 2 handfuls of spinach 1 small to medium tomato 1 boiled egg
Ingredients Grilled Chicken:
Ingredients French Fries:4 medium sized potatoes 2-3 tsp Lawry’s seasoning (or seasoning of choice) Canola oil
- Heat canola oil in pot.
- Clean and cut potatoes. Place cut potatoes in bowl and add seasonings. Mix seasonings by hand or shake in bowl. Watch oil and begin to fry potatoes while you prepare the salad and chicken.
- Chop lettuce, tomato, egg and spinach. Mix together in a bowl.
- If you are using two large chicken breast, cut in half then season on both sides. Turn on George Foreman and grill breast. Add olive oil or butter to George Foreman to give chicken breast flavor and avoid sticakge.
- Choose to place chicken over a bun or salad and enjoy!
