Are you looking for something other than old hot dogs for dinner? This week I decided to do more with Italian turkey sausage then just ground it up for pizza. Instead I cooked it on my electric griddle. Super-duper pro for this meal is that all I had to do for the meat (blame it on my mama but I am always looking for a protein, starch and veggie in a meal) was take it out of the pack – pretty much. There was no seasoning or intense cleaning involved.
We are also trying to make more of an effort to be conscious of how much we fry food. Once or twice a week is my limit. (Unless there is a Holiday or birthday involved.) I think this week I have officially exhausted potato ideas – at least for now.

How Many Will This Feed?
Servings: 2 grown people, 1 teen girl and 1 growing seven year old boy and 1 almost 6 year old girl
Prep Time: 10 mins (Realistically, with kids around maybe 15 mins)
Cook Time: 40-45 mins
Total Time: about 1 hour
Ingredients Italian Turkey Sausage with Bell Peppers, Mushrooms & Onions:
5 Italian Turkey Sausages
5 Hoagie Rolls
¼ cup chopped bell peppers
¼ cup onions sliced
¼ cup chopped mushrooms
4 tablespoons butter/olive oil
Big handful of chopped spinach
Mozzarella or Swiss cheese
Directions Italian Turkey Sausage with Bell Peppers, Mushrooms & Onions:
Note: Not a fan of pork? Remove casing before cooking. This Jennie-O Italian turkey sausage is encased in pork fat. (I should have read the label better, because I prefer our food not touch pork...I’m just saying)
On one side of electric griddle pour two tablespoons of butter/olive oil and begin to grill mushrooms, onions and bell peppers
On the other side of the electric griddle melt two tablespoons of butter/olive oil. Grill turkey sausages and turn every five minutes until cooked all the way through.
Clean electric griddle and toast hoagie rolls lightly (if hoagie’s are too large then you may need to cut off ends)
Assemble toasted hoagie rolls with Italian sausage (I also used mayonnaise), mushrooms, onions and bell peppers.
Add chopped spinach and cheese.
Place in oven for a few minutes to melt cheese
Ingredients Crispy Baked Potato Wedges:
4 Baking potatoes unpeeled
4 tablespoons olive oil
1 teaspoon salt
1 teaspoon Tony Chachere’s Famous Creole Seasoning
1/2 teaspoon freshly ground black pepper
1 teaspoon garlic powder
(feel free to add whatever other seasonings that may tempt your taste buds)
Directions Crispy Baked Potato Wedges:
Preheat the oven to 400 degrees F.
Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise.
Mix olive oil and seasonings in a bowl
Toss potatoes with olive oil and seasonings. Make sure the potatoes are covered with oil and seasonings.
Spread the potatoes in a single layer with 1 cut-side down.
Bake the potatoes for 30 to 35 minutes, turning to the other cut side after 20 minutes. Bake until they are lightly browned, crisp outside, and tender inside.
