Grilled Salmon with Fresh Mixed Greens
Is everyone in your family a salad fan? Not mine. I can probably get at least one of the kiddos to actually be excited about eating salad. I can get another one to eat it, but they will complain. Making my third child eat salad requires a thirty minute taxing process which includes ignoring the question “Why do I have to eat salad?’ asked a hundred different whiny ways. The response requires progressing up the threat level chart: Threatening to forgo playing outside (which by the way does not work when it’s raining) An early bedtime And finally No dessert! Sometimes I am up for the challenge, and sometimes I’m not. On days I’m not I make salad for me and the hubby while the kiddos munch down on leftovers or something the hubby and I don’t want. It’s safe to say that this grilled salmon salad falls into this category. I like this recipe because you can make it in no time, it’s healthy and filling. All of the positives in this meal work for aging cholesterol watching adults – like the hubby and I. As for the kiddos, they will hopefully learn to appreciate salmon topped salad later.
