Ground Turkey Black Bean Burritos

 
My children stayed with my mama and daddy the other night.  When I called in the morning to check on them my oldest answered the phone and informed me that granny was making breakfast.
‘What’s she making?” I asked.
‘Salmon, grits, eggs and… biscuits.’
‘Biscuits! Ya’ll are having biscuits? Aw man!’ I complained.
In one second I was brought back to Saturday mornings when my mama would make a big breakfast.  Sometimes she would make pancakes and bacon (real bacon) or liver pudding and grits (Yes, I did say liver pudding). 
I could hear my daughter smiling.   She knew.  I loved the peace and quiet in my house at that moment, but I would have traded it right then and there if my daughter could’ve passed just one of those hot biscuits through the phone. My mama makes biscuits from scratch – Crisco, buttermilk and all.  A skill I have yet to fully master.  I got a feeling that even when I do, like most things, my from scratch biscuits will not taste like my mama’s.
When a single word, like biscuits, can take me back to my childhood I know why it is that I try to cook at least 5 days a week for my family.  A part of it is that I am trying to look out for our health.  I can control how much butter and salt goes into our food.  And just as important where else am I going to find spaghetti made with ground turkey in the South but in my own kitchen. I agree with the ABC news report, Real Money: Fast Food Versus Home-Cooked Meals, that cooking at home saves money and time.
 
But the other part of me wants my children to grow up with meals in mind that trigger memories of home.  Meals that they would swear taste different when I make them.

Servings: 2 grown people, 1 teen girl and 1 growing seven year old boy and 1 almost 6 year old girl
Prep Time: 5 mins (Realistically, with kids around maybe 30 mins)
Cook Time: 45 mins (Winner! You can walk away and do other things while this simmers)
Total Time: 1hour
(This meal is also winner because I used 1 pan, which included the veggies!)

 

 

 

 

 

 

Ingredients:

Butter or olive oil
½ chopped onion
Ground turkey
Seasonings of choice or
¼ teaspoon Tony Chachere’s Famous Creole Seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
Taco powder seasoning of choice
1 8 oz. can of Black beans
2 cups of sharp cheese
2 cups fresh spinach
16 burritos (8 for now and 8 for freezing OR you can just freeze the extra filling - more on this later)
 
 
 

Directions for Burrito Mixture:

Saute onions in butter/olive oil.
Add ground turkey and seasonings (NOT TACO SEASONING) and break apart while it browns.
Once ground turkey browns add taco seasoning and follow packet directions.
Once taco seasoning has been added and mixed well add black beans.
Add 1 cup of sharp cheese
Stir and let simmer until cheese has melted.

Directions for assembling Burritos:

Preheat oven to 350 degrees
Divide remaining cheese among 8 burritos
Add 1/3 cup of burrito mixture on each burrito
Fold burrito and place in oven for 5-7 minutes.

Note: Freezing 8 pre-made burritos are great because you can leave them for the kiddos to put in the oven or microwave for lunch or dinner
If in the microwave:
Wrap each burrito in a paper towel, then foil.
Place in freezer bag. May be frozen for up to two months.
To eat remove foil and place paper towel wrapped burrito on a plate in microwave for 3-4 minutes or until heated through.
If in the oven:
Wrap each burrito in foil.
Place in freezer bag. May be frozen for up to two months.
To eat place foil wrapped burrito on an oven safe dish at 375 degrees for 35-45 minutes or until heated through.
