Spinach and Cheese Lasagna Rolls Smothered in Turkey Spaghetti
There are times when spaghetti is a great go to. Then there are times when I look in the freezer, see ground turkey and think to myself: “Not spaghetti again!” The kiddos and hubby don’t seem to mind if spaghetti makes an appearance at the dinner table at least once a week. I on the other hand do. Times like these I shoot for a variation of my original recipe. My inspiration this week? Lasagna rolls. This recipe worked out great because the entire family ate it and…we had leftovers. Winning!
Servings: 2 grown people, 1 teen girl and 1 growing seven year old boy and 1 6 year old girl. Prep Time: 25 mins Cook Time: 45 mins -1 hour (Including making spaghetti sauce) Total Time: 1hour to 1 hour and 25 mins
Ground turkey spaghetti sauce Lasagna Rolls 2 cups shredded parmesan cheese 2 cups chopped fresh spinach 1 cup ricotta cheese ½ tsp salt 1 tsp Pepper 1 tsp garlic powder 1 tsp onion powder 2 tsp oregano 2 tsp basil Lasagna noodles Mozzarella cheese
Make spaghetti sauce.
Boil lasagna noodles. 6-8 sheets
Mix spinach, parmesan and ricotta cheese and seasonings. Remove lasagna noodles from water and lay out on paper towels. Spread spinach and cheese mixture on a lasagna noodle and roll.
Grease baking dish with butter. Place lasagna rolls into baking dish.
