When You Can’t Have French Fries…Oven Fried Potatoes
What do you prefer French fries or oven potatoes? A few years ago I would make my weekly rounds to my favorite French fry spots passing on three bags filled with the greasy treat to my three in the backseat. Now, motivated by trying to keep cholesterol from rising in our household, we are learning to save our love of fried foods, including French fries, until the weekend. Let me tell you, it’s not easy. The kiddos have adjusted. They’ve stopped asking why we don’t stop by the drive through line as much any more. I on the other hand still have to fight not to turn the car in the path of a French fry when the kiddos are not with me – most times I am successful. I do my best to follow the advice of KidsHealth.org and make French fries an every once in a while snack. Now when I want a fried potato fix I make these oven fried potatoes to get me through the week.
Servings: 2 grown people, 1 teen girl and 1 growing eight year old boy and 1 6 year old girl (Enough for dinner and leftovers to send with the kiddos for lunch) Prep Time: 10 mins Cook Time: 40 -45 mins Total Time: 50 mins
4 medium potatoes 1/3 cup plain flour 1/2 tsp salt 1/2 tsp ground thyme 1/2 tsp garlic salt 1/8 tsp Tony’s seasoning 1/2 tsp pepper or lemon pepper
1/4 cup butter 1 garlic clove
1 gallon sized plastic bag or large Tupperware with lid 1 baking dish
Preheat oven to 450 degrees. Cut potatoes into cubes. Mix flour and seasonings. Shake well to make sure seasonings are all mixed together in bag. Add chopped potatoes to flour and seasonings and shake up. Melt butter with chopped garlic in baking dish/pan. [If you do this in your 450 degree preheated oven, word to the wise….don’t walk away. This butter and garlic can burn quickly.] Add floured potatoes to garlic and melted butter baking dish/pan. Cover and bake for 20 minutes. Remove covered baking dish/pan from oven and stir potatoes. Place back into oven and bake uncovered for another 20-25 minutes or until potatoes turn golden and crispy.
