Yum! Baked Macaroni and Cheese Please!
What’s the one dish your kiddos could eat every day of the week? For my kiddos it would have to be macaroni and cheese. Baked macaroni and cheese. I was not aware that everybody did not grow up on baked macaroni and cheese. Apparently there’s a whole world out there that grew up on the stove top stuff. Who knew? I can see why the stove top version is popular. Not only is it fast, but it’s also easy. Make no mistake about it baked macaroni and cheese is not for the faint of heart. If not done right you can end up with a dish that is more macaroni than cheese or vice versa. Or worse, you can end up with a macaroni dish that is dry. Either version does not make for a delight on the taste buds. I have messed up many a version of macaroni and cheese, mostly because I don’t follow the recipe on the box. I’ve got a family of five. If I were to use an entire pound of macaroni noodles I’d have enough to host Thanksgiving dinner. While my family likes macaroni and cheese, they don’t necessarily like it that much. After a few years I’ve learned how to tweak the recipe so that I can come out with just enough to serve a family of five, twice. Now, stove top macaroni and cheese take that!
Enjoy!Servings: 2 grown people, 1 teen girl and 1 growing eight year old boy and 1 6 year old girl (2 times!) Prep Time: 5-10 mins (less if you buy pre-shredded cheese) Cook Time: 1 hour to 1 hour and 15 mins Total Time: About 1 hour and a half
1 cup noodles 6 Tbs butter 1 cup extra sharp cheese 1/2 cup sharp cheese 1 cup milk 1 cup heavy whipping cream Salt Pepper
Boil noodles and preheat oven to 350 degrees. Drain noodles and transfer to baking dish. Add butter to hot drained noodles. Add eggs and stir until combined. Stir fast if the noodles are still really hot - unless you want scrambled eggs in your macaroni. Add cheeses and milk. Add salt and pepper to taste (note if you use a rather salty cheese, i.e. Kraft extra sharp you may not need to add a lot of salt). Bake in oven for 1 hour to hour and fifteen minutes.
